Vegetable Beef Soup
Comfort food that's good for you! This is a classic, and made with the best ingredients it is incredible! If you've never made your own bone broth before it can feel daunting, but its surprisingly easy and the results are better than any broth you can find in the store!

Ingredients
- 1 package Blackberry Ridge Farms Grass Fed Beef soup bones
- 4 quarts homemade bone broth (see instructions)
- 2 Tbsp olive oil
- 1 Cup chopped carrots
- 1 Cup chopped onion
- 1 Cup chopped celery
- 1 quart stewed tomatoes
- 1 Cup pearled barley (optional)
- 1 Cup diced potatoes (optional)
- Salt and pepper to taste
Directions
- Use 1 pkg Blackberry Ridge Farms soup bones. Place soup bones in crockpot and fill with water.
- To add flavor, mix in vegetables and herbs if desired (carrots, onion, celery, rosemary, and thyme add rich flavor to bone broth).
- Add about 2 Tbsp salt and 1 Tbsp apple cider vinegar.
- Cook covered on low for 18-24 hours. Strain the broth into a container and keep the meat.
- You can make the broth ahead of time and save in the fridge for about a week.
- Heat olive oil over medium heat in a large pot. Add carrots, onion, celery and cook, covered, for 7-10 min, stirring occasionally.
- Add strained broth, stewed tomatoes, and meat. Bring to a boil and add potatoes and/or barley, if desired.
- Reduce heat to simmer and cook for about 30 minutes. Taste test and add salt and pepper to taste.
- Enjoy with a simple salad and good bread.
