Spicy Lamb Burgers

Directions

Burger Preparation

1. Place the lamb in a large bowl and add the cilantro, paprika, cumin, salt, coriander, fennel, thyme, red pepper flakes, and garlic.

2. Knead the mixture until the ingredients are incorporated evenly.

3. With wet hands, form meat into equal 8 balls.

4. Flatten the balls into thick patties, set aside or cover and refrigerate overnight.

Sauce Preparation

1. Add the lemon zest and juice in a medium bowl.

2. To the same bowl, add salt, garlic, tahini and whisk together.

3. Finally, whisk in the yogurt, followed by the scallions and dill.

Cooking

1. To cook the burgers, add a small amount of oil to a cast iron skillet to create a thin film and then set over medium heat.

2. When the oil is wavey, add patties and cook in batches so as not to crowd the pan.

3. The burgers are finished when fully browned on both sides.

Serving

1. To serve, tuck each patty into pita with a spoonful of sauce.

2. Add tomatoes, cucumber, avocado, and cilantro to taste.
