These Spicy Lamb Burgers combine fragrant Mediterranean spices with a creamy yogurt-tahini sauce for a vibrant and flavorful bite!

Ingredients

1 lb Ground Lamb
½ Cup Chopped Cilantro
2 Tbsp Sweet Paprika
2 Tbsp Ground Cumin
2 Tsp Coarse Salt
1 Tsp Ground Coriander
1 Tsp Ground Fennel
1 Tsp Ground Thyme
Pinch Red Pepper Flakes
2 Cloves Grated Garlic
Extra Virgin Olive Oil

1 Lemon Zest & Juice
2 Cloves Grated Garlic
3 Tbs Tahini
1 Cup Plain Whole Milk Yogurt
¼ Cup Thinly Sliced Green Onion
2 Tbs Chopped Fresh Dill
Directions

Place the lamb in a large bowl and add the cilantro, paprika, cumin, salt, coriander, fennel, thyme, red pepper flakes, and garlic.
Knead the mixture until the ingredients are incorporated evenly.
With wet hands, form meat into equal 8 balls.
Flatten the balls into thick patties, set aside or cover and refrigerate overnight.

Add the lemon zest and juice in a medium bowl.
To the same bowl, add salt, garlic, tahini and whisk together.
Finally, whisk in the yogurt, followed by the scallions and dill.

To cook the burgers, add a small amount of oil to a cast iron skillet to create a thin film and then set over medium heat.
When the oil is wavey, add patties and cook in batches so as not to crowd the pan.
The burgers are finished when fully browned on both sides.

To serve, tuck each patty into pita with a spoonful of sauce.
Add tomatoes, cucumber, avocado, and cilantro to taste.
