Pork Loin Sandwich
A slow roasted pork loin sandwich. This sandwich is warm and layered with many flavors. From the perfect pork rub to the salsa verde sauce and the spicy arugula.

The Basics
Ingredients
- Pork Rub - recipe below
- 3-4 lb Fertile Acreage Farm Boneless Pork Loin
- Arugula
- Mayonnaise
- 2 Tbsp Olive Oil
- 1 Diced Yellow Onion
- 4 c Chicken Broth
- 2 Sprigs of fresh rosemary or 2 Tbsp of dried rosemary
- 2 Sprigs of fresh oregano or 2 Tbsp of dried oregano
- 4 slices of Provolone Salsa verde (store bought or recipe below)
Directions
- Turn oven to 300 F
- Mix all pork rub ingredients in a bowl and stir together
- Spread rub on each side of pork loin
- Heat olive oil in a oven roasted crock
- Sear each side of pork loin for 5 minutes
- Remove pork loin and cook down onions
- Set pork loin flat on top of onions in the roaster
- Add Rosemary and Oregano on top of loin
- Pour chicken broth on top
- Cook Pork Loin for 3 hours
- Remove Loin from oven and let cool
- Cut open baguette and top with provolone or your favorite cheese
- Roast baguette with cheese until melted in oven at 350 F
- Remove baguette from oven and top with arugula, mayonnaise, salsa verde
- Slice pork loin to desired thickness and dip in meat drippings
- Place pork loin on sandwich and serve
